What better way to celebrate the highly-anticipated Mad Men Season 5 premiere than by grilling out at home?

On our menu:

  • Brie with pepper & onion jelly

  • Pork chops with a dijon mustard and brown sugar glaze
  • Grilled zuchinni & squash
  • Brownies {unfortunately, not pictured}

Voila! Fun, easy and very tasty. Now if I only I can figure out what to make for dinner tonight…

Oh 2011, what a whirlwind. Life is good, I couldn’t be happier.

This year I made new friendships and strengthened old, traveled extensively for work, stood by my best friend as she got married, moved out of the Treehouse and into the new condo (name TBD), helped a friend propose to his now-fiancée (who just so happens to be one of my very favorite people in the world!), felt overwhelmed with gratitude that a very special person came into my life and… last but definitely not least, photographed some of my most amazing clients to date. As always, a million times thank you from Her Side Project.

On tonight’s menu: Scrambled Omelettes!

Last time I made this dish, I couldn’t help but notice the brilliant colors as I mixed everything together. Since it’s so good and pretty when prepared, I thought I’d share the recipe and scenes from my kitchen!

Ingredients
:

  • Eggs – as many as you’d like (I use 2)
  • Tomatoes
  • Sliced ham
  • Fresh jalapeños (hot hot hot!)
  • 2% Mexican Jack cheese
  • Mushrooms
  • Medium-hot salsa
Instructions:
Pour eggs into a skillet with a bit of olive oil or light butter. Add sliced ingredients.
Cook on medium to high heat until the eggs are fully scrambled and cooked.
Arrange on a plate and, if you want to add more kick to the dish (which I always do), add a few spoonfuls of salsa on the side.
While this meal may be full of traditional breakfast foods, it’s a great quick and easy dinner. Gotta love brinner.
